The 100 g mini duck foie mousse with truffle is a dough (emulsion) based on grinded duck fatty liver and truffle, subjected to a light heat and pressure treatment to obtain a semi-tinned food.
It is very appetizing due to the contrast in textures between the mousse and the truffle and its peculiar truffle flavor.

Ideal for canapes
The crushed (emulsified) dough based on foie gras can be spread on bread, or made in original presentations in small cubes or balls that are very attractive. Take the Foie Gras out of the refrigerator and keep it at room temperature between 5 and 20 minutes before tasting it in order to appreciate all its qualities. Once opened, cut it into thin slices. To do this, use a very sharp knife, previously passed through hot water. You can also use a cheese lyre to cut it. Serve on toasted bread that will be useful as a "base" for the foie gras that we are going to taste.
